03 Jun Peanut Butter and Dark Chocolate Probiotic Ice Cream Sandwiches
As our New Probiotic Ice Cream hits the shelves in Harris Farm, we want to share some awesome and simple at home recipes with you. These delicious Cookie Sandwiches by Emma Swanston are the perfect Sunday afternoon snack.
For the cookies:
- 1 cup peanut butter (or nut/seed butter of choice)
- 3/4 cup plant based/monk fruit sweetener (or coconut sugar)
- 1 egg
- 1/2 tsp salt + extra for sprinkling
- 1/2 tsp vanilla extract
For the chocolate coating:
- 1 block (1/2 C) of dark chocolate
For the filling:
- Mix all cookie ingredients.
- Shape into cookie rounds.
- Bake @ 175’C/350’F for 6-8 mins
- While cookies bake, melt chocolate dip/slather one side of each cookie with melted chocolate
- Sprinkle with salt
- Stuff with Twisted ice cream
